How To Brew

At Choi Time we want you to spend your time sipping and savouring our delicious teas as well as enjoying the ritual of preparing them.

These pretty, textural bulbs, pearls and buds simply need to be infused in just boiled water, (the optimal temperature for our green teas is 82-88 degrees) before they begin to unfurl and disperse their rich flavour and unique qualities to create a perfect cup of tea.

Our Flowering teas can make between 1.5L - up to 5L litres of tea per bulb, and like all of our teas are good for multiple infusions.

We’re always being advised to effectively hydrate our bodies with water during the day which is why Melissa Choi drinks up to three and a half litres of tea a day. Why not add the benefits of antioxidants to that hydrating process and take Melissa’s lead by enjoying a number of glasses of Choi Time Teas every day?

In your mug (400mls)

Jasmine Green Tea Pearls

You'll get best results from a teaspoon (approx. 8-15 pearls), and you'd expect to get at least 3- 5 refills. Just keep topping up with hot water. If enjoying jasmine green tea pearls from a teapot, use double quantities. Delicious cold.

Damask Rose Tea Buds and Chrysanthemum Flowers 

Allow 2-4 rosebuds/chrysanthemum flowers - these flowers are of the highest quality, so they contain much greater quantities of rose oils than most similar products. Keep topping up with hot water for at least 3-5 cups. Delicious cold.

Giant Flowering Tea Bulbs

Use one 1 Bulb per cup/teapot and watch it slowly unfurl in your glass. Makes a minimum of 1.5 litres of tea, just keep adding hot water throughout the day. Delicious cold.

White Silver Needles

Use a gram of leaves and make sure the water temperature is between 70 - 80 degrees. You'd expect to get at least 3- 5 refills. Just keep topping up with hot water. Delicious cold.

Green Oolong & Wild Green Tea 

Use the size of a 20pence piece and add hot water 80 - 90 degrees. You'd expect to get at least 3- 5 refills. Just keep topping up with hot water. Delicious cold.

As the Chinese say...

the first cup you give away,
the second is for yourself,
the third is for the emperor,
the fourth for your wife
and the fifth for your servant.

While in modern life this may not have the same relevance it once did, the proven had the same logic behind it as we have behind our brewing instructions - the highest quality teas are always suitable for multiple infusions.
